Bonbon is a fruit-forward light roast blend! It's a candy-like coffee with vibrant notes of fruit punch, blackberry, and grape Jelly Belly, rounded out with hints of florals, stone fruit, and an exceptionally clean cup.
The bulk of Bonbon is an anaerobic natural from the volcanic slopes of Mt. Ijen in East Java—an origin we haven't sourced before—where cherries are sealed in oxygen-free tanks so yeasts and bacteria break down the sugars into the coffee's distinctive fruit-forward character, farmed free of chemical inputs on land bordering protected national forest.
Rounding it out is an EcoCertified washed Ethiopia from Guji, produced by Getachew Zekele, an accountant by training who built a farm-to-export business that bypasses the traceability limits of the national auction (ECX) and cooperative unions by managing quality directly from farm to export; its washed profile keeps the cup exceptionally clean, adding structure and complexity to balance the natural's fruity profile.
Resting Note: Considering the anaerobic processing creates complex flavours, Bonbon needs at least two weeks (preferably 4+) of post-roast rest to taste its absolute best. We handle a 2-week rest period for you so that as soon as your bag arrives, it's brew-ready.
