Cherries from small producers in Tolima, Huila, and Caldas are brought to their El Vergel estate in Tolima. There, they undergo honey processing for two to three days in sealed, oxygen-free stainless steel tanks with red apples and lactobacillus cultures. This is what gives the coffee its smooth roundness, creamy texture, and slight candy apple character.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cmeta charset=\"utf-8\"\u003eThe other half is an organic, Fair Trade washed Guatemala from the ASOBAGRI cooperative in Santa Cruz Barillas, Huehuetenango.
